Apricot Almond Oatmeal

Here’s how to add a little extra flavour to an old breakfast favourite: top warm oatmeal with cottage cheese and apricot jam, garnish with blueberries, almonds and chopped apricot.

Prep Time: 2 minutes
Cook Time: 1 minute
Freezing : not recommended
Makes: 1 serving (280 mL)

Ingredients:

1/3 cup (75 mL) Robin Hood® Old Mill® Minute Oats
2/3 cup (150 mL) boiling water
1/4 cup (50 mL) Nordica® 1% Cottage Cheese
4 tbsp (60 mL) Smucker's® Pure Apricot
2 tbsp (30 mL) fresh blueberries
1 tbsp (15 mL) almonds, sliced apricot, chopped (optional)

Directions:

1. Combine oats and boiling water in bowl and cover with plastic wrap for 1 minute. Combine cottage cheese and apricot jam. Top cooked oatmeal with cottage cheese mixture, and garnish with fresh blueberries and almonds. Add chopped apricots, if desired.

I'm surprised! Minute Oats don't seem to take any longer than those instant packages, but have only the sugar/etc. that you add. So much healthier!
