A fresh and crunchy salad you can serve on its own or as a side. A great way to use up extra grilled chicken.
1 lb (500 g) boneless chicken breasts3 1/2 cups (875 mL) cooked wild rice1 cup (250 mL) sliced green onions1 cup (250 mL) seedless red or green grapes, halved1 cup (250 mL) Smucker's® No Sugar Added Orange Fruit Spread1/3 cup (75 mL) raspberry or red wine vinegar1 tbsp (15 mL) grated orange zest1/4 tsp (1 mL) salt Lettuce Pecan halves (optional)
1. Cook the chicken breast. Cool and cut in 1/2” (1 cm) strips. In a large bowl, combine chicken, rice, green onions and grapes. Toss to mix.2. In a small bowl, mix orange spread, vinegar, orange zest and salt. Pour over chicken mixture and mix well.3. Serve salad on lettuce lined plates. Sprinkle with pecans if desired.
1. Try the dressing on a mixed greens salad.2. Replace chicken with smoked turkey, ham or cooked shrimp.
really great with mandarin orange slices and toasted sesame seeds as an option with a couple a drops of ginger or soy sauce added. You can change out the chicken for turkey or tuna or really thinly sliced roast beef too....or add toasted peanuts... I like to experiment a lot with a base recipe and then add options. I have picky eaters in my house. cuts down on making multiple meals...lol
