Raspberry jam is the special ingredient in this zesty-tasting vinaigrette. Enjoy the dressing served over mixed greens or baby spinach. For an extra special salad, garnish with toasted nuts, mandarin orange pieces and some fresh raspberries.
1 cup (250 mL) Smucker’s® Pure Raspberry Jam1/4 cup (50 mL) balsamic vinegar1/4 cup (50 mL) Dijon mustard3/4 tsp (3 mL) freshly ground pepper1/2 cup (125 mL) Crisco® Canola or Vegetable Oil1/2 - 3/4 cup (125-175 mL) water
1. Combine jam, vinegar, mustard and pepper in a small bowl, whisking until blended. Gradually whisk in oil then add 1/2 cup (125 mL) water. Continue whisking until smoothly blended. Add additional 1/4 cup (50 mL) water if a thinner consistency is desired.
1. Serve over baby spinach or mixed greens. Try tossing some fresh raspberries, mandarin orange pieces, goat cheese or toasted nuts and sunflower seeds into the salad as well.
