Oriental Chicken & Snow Peas

Ingredients

  • 1 lb (500 g) boneless chicken breast, cut into 1/2” pieces
  • 2 tbsp (30 mL) vegetable or canola oil
  • 1/2 tsp (2 mL) salt
  • 6 oz (175 g) fresh snow peas (2 cups/500 mL)
  • 1/3 cup (75 mL) whole blanched almonds
  • 1/2 cup (125 mL) Smucker's® Pure Apricot Jam
  • 1/3 cup (75 mL) chicken broth
  • 1 1/2 tbsp (22 mL) soy sauce
  • 1 1/2 tbsp (22 mL) cornstarch
  • Pinch ground ginger
  • 4-6 cups (1-1.5 L) hot cooked rice

Directions

  1. Heat oil in wok or large skillet. Add chicken and stir-fry until brown. Sprinkle chicken with salt. Add snow peas and almonds to wok; cook and stir 2 minutes.
  2. Mix jam, chicken broth, soy sauce, cornstarch and ginger; stir into wok with cooked chicken and vegetables. Bring to a boil, stirring constantly just until thickened. Serve over rice.
