Faux Tandoori Chicken

Ingredients

  • 3/4 cup (375 mL) Mustard Gone Wild
  • 1/4 cup (50 mL) yogurt
  • 1 tbsp (15 mL) chopped fresh ginger
  • 1 clove garlic, minced
  • 2 tsp (10 mL) curry powder
  • 1/2 tsp (2 mL) pepper
  • 4 boneless, skinless chicken breasts or thighs

Directions

  1. Combine Mustard Gone Wild, yogurt, ginger, garlic, curry powder and pepper in a medium sized bowl. Add chicken, cover and marinate in the refrigerator for at least 1/2 hour or overnight. Sprinkle with salt just before cooking. Heat barbecue. Cook chicken for 25 minutes or until internal temperature reaches 165ºF (74ºC).

Tips

  1. Adding salt to the chicken just before cooking keeps it moist. If the salt is in the marinade it draws all the moisture out of the chicken. You can also use this recipe for salmon. Fish cooks 10 minutes per inch (2.5 cm) of thickness. You can make additional marinade to brush on vegetables before grilling, such as eggplant and zucchini.
