Baby Green Salad with Orange Vinaigrette, Blue Cheese and Toasted Pecans

Ingredients

  • Salad
  • 6 cups (1.2L) baby salad greens
  • 1/4 red onion, thinly sliced
  • Orange Vinaigrette (recipe follows)
  • 1/4 cup (50 mL) crumbled blue cheese
  • 1/4 cup (50 mL) toasted pecans
  • Orange Vinaigrette
  • 1 jar (310mL) Smucker’s® No Sugar Added Orange Fruit and Concentrated White Grape Juice Spread
  • 1/4 cup (50 mL) balsamic vinegar
  • 1/4 cup (50 mL) Dijon mustard
  • 3/4 tsp (3 mL) freshly ground pepper
  • 1/2 cup (125 mL) olive oil
  • 1/2 to 3/4 cup (125-175 mL) water

Directions

    Salad
  1. Combine greens, onions and desired amount of vinaigrette in medium sized bowl. Arrange on serving platter and garnish with blue cheese and pecans. Serve immediately.
  2. Orange Vinaigrette
  3. Combine first 4 ingredients in medium sized bowl. Gradually whisk in olive oil then ½ cup (125mL) water. Continue whisking until smoothly blended. Add additional ¼ cup (50mL) water if a thinner consistency is desired.
