Marmalade and Walnut Tea Bread

Ingredients

  • Tea Bread:
  • ½ cup (125mL) Smucker’s® Pure Orange Marmalade
  • ½ cup (125mL) butter
  • 1 tbsp (15mL) orange or lemon zest
  • ½ cup (125mL) sugar
  • 1 cup (250mL) milk
  • 2 eggs
  • 1 tsp (5mL) vanilla extract
  • ½ tsp (2mL) salt
  • 3 cups (750mL) Robin Hood® Original All Purpose Flour
  • 2 tsp (10mL) baking powder
  • 1 cup (250mL) toasted walnuts, chopped
  • Grease an 8 1/2” x 4 1/2” (22cm x 11cm) loaf pan
  • Marmalade Butter:
  • ¼ cup (50mL) Smucker’s Pure Orange Marmalade
  • ¼ cup (125mL) butter, softened
  • Lemony Marmalade
  • ½ cup (125mL) Smucker’s Pure Orange Marmalade
  • 1 ½ tbsp (22mL) lemon zest

Directions

    Tea Bread:
  1. Preheat oven to 350°F (175°C). Grease an 8 1/2" x 4 1/2" (22cm x 11cm) loaf pan.
  2. Combine Marmalade and butter in large microwave safe bowl. Microwave on high, about 1 minute or until melted. Remove and mix well. Add zest and sugar. Whisk in milk, eggs, vanilla and salt. Add remaining ingredients and stir until combined. Pour into prepared pan. Bake in preheated oven, 55-60 minutes or until toothpick inserted in centre comes out clean. Let cool in pan 5 minutes then remove to wire rack.
  3. Marmalade Butter: Combine ingredients.
  4. Lemony Marmalade: Combine ingredients.
