Baked Pears with Goat Cheese and Raspberry Drizzle

Ingredients

  • 4 firm-ripe pears, halved (Bartlett, Anjou or Bosc)
  • 1 tbsp (15 mL) lemon juice
  • 1/2 cup (125 mL) orange juice
  • 2 tbsp (30 mL) sugar
  • 1/4 cup (50 mL) Smucker’s® No Sugar Added Raspberry Fruit and Concentrated White Grape Juice Spread
  • 1/4 tsp (1 mL) coarsely ground black pepper
  • 2 oz (60 g) goat cheese

Directions

  1. Remove pear cores with melon baller and sharp knife; brush with lemon juice.
  2. Place pears in 12 X 8-inch (30 X 19-cm) baking dish, cut side up, in single layer.
  3. Combine orange juice and sweetener and pour over pears.
  4. Cover pears tightly and bake at 375° (190°C) for 30 to 45 minutes or until tender.
  5. Transfer pears to serving plate, reserving juices.
  6. In small saucepan, combine jam, reserved juices and black pepper; bring to boil and cook for 2 to 3 minutes, or until thickened.
  7. To serve pears: place 2 warm pear halves on individual plates, fill cavities with a little crumbled goat cheese and drizzle with warm raspberry sauce.
