Ingredients
- 1 tsp (5 mL) butter
- ½ cup (125 mL) cottage cheese
- 4 eggs
- salt and pepper to taste
- chipotle pepper sauce to taste (optional)
- 4 slices (142 g) whole wheat bread
- 3 tbsp (45 mL) Smucker’s® Double Fruit® Strawberry Fruit Spread
Directions
- Melt butter in large skillet over high heat.
- Combine next 4 ingredients in a bowl and pour into skillet.
- Stir and scramble 3-4 minutes, or until desired consistency is reached.
- Toast bread while cooking eggs.
- Once bread is toasted, spread with fruit spread.
