Easy Scrambled Egg Bagel

Ingredients
- 2 2 eggs, lightly beaten
- 2 tbsp (30 mL) part-skim Mozzarella cheese, shredded
- salt and pepper to taste
- 1 whole wheat bagel, sliced and toasted
- 1 tsp (5 mL) butter
- sliced tomato and lettuce (optional)
Directions
- Combine eggs, cheese, salt and pepper in 4 cup (1 L) glass measuring cup or bowl. Cover with plastic wrap leaving a small space open for venting. Microwave on 70% power (medium-high) for 1 minute. Remove and stir. For slightly runnier eggs, microwave for 1 minute longer or for firmer eggs, microwave for 1 minute and 10 seconds longer.
- Remove eggs and let stand for 30 seconds.
- Spread toasted bagel with butter and top with eggs. Add tomatoes and lettuce if desired.
