Blueberry French Toast

Ingredients

  • 1 cup (250 mL) Egg CreationsTM Original Liquid Eggs, well shaken
  • 1 tsp (5 mL) vanilla extract
  • 1/2 tsp (2 mL) ground cinnamon
  • 1/2 cup (125 mL) Smucker's® Pure Blueberry Jam
  • 8 slices sandwich bread (white or whole wheat)
  • non-stick cooking spray
  • icing sugar (optional)
  • blueberry sauce (optional)

Directions

  1. In a wide shallow dish, whisk together liquid eggs, vanilla, and cinnamon.
  2. Spread 2 tbsp (30 mL) jam on 4 slices of bread; top with remaining bread. Dip both sides of bread into egg mixture until all the liquid is absorbed.
  3. Spray a non-stick skillet with cooking spray. Heat over low-medium heat and cook bread for 2-3 minutes per side or until golden brown.
  4. If desired, serve with a dusting of icing sugar or blueberry sauce on top.
  5. Blueberry Sauce:
  6. Combine 1/3 cup (75 mL) Smucker’s® Pure Blueberry Jam and 1 tbsp (15 mL) lemon juice in a small bowl. Microwave on high for about 15 seconds to warm mixture; stir well. Drizzle sauce over French toast.

Tips

  1. Prepare French Toast as directed above, up until bread is dipped in egg mixture, then place on a baking sheet sprayed with non-stick cooking spray. Cover and refrigerate overnight. The next morning, bake uncovered in a preheated 350°F (180°C) over for 20-22 minutes or until golden brown, turning bread over after about 15 minutes. If using Blueberry Sauce, prepare night before, refrigerate covered and warm in microwave for 15-20 seconds before using; stir well.
